8 eggs
2 medium zucchini, trimmed and grated
4 oz (120 g) thinly sliced prosciutto, torn into shreds
1/4 c. grated Parmesan cheese
3 tbsp chopped fresh Italian parsley
salt and pepper to taste
1 tbsp olive oil
Preheat broiler.
In a large mixing bowl, beat eggs. Add zucchini, prosciutto, Parmesan, parsley, salt and pepper. Mix to combine.
In a large nonstick or cast-iron oven-proof skillet, heat oil over medium heat. Pour in egg mixture and swirl to set evenly. Smooth top with a fork.
Reduce heat to medium-low and cook, uncovered until edges are set and centre is runny.
Place under broiler briefly just to set (1 or 2 minutes) Set aside to cool in pan 5 minutes.
Slide unto platter to serve.
